Artichokes
Artichokes come in different varieties and have a wonderful range of flavor. Artichoke is grown throughout many parts of Europe, South and North America. It appears more frequently at the market. Artichoke hearts are often eaten raw in salads. Artichoke hearts can also be baked, braised, marinated, roasted, steamed, grilled or broiled. However it is advisable not to boil them because boiling leaches out their flavor and nutrients.
Artichoke contains good level of antioxidants, fiber, folate, magnesium, potassium and vitamin C. They can help reduce cholesterol. Compound in artichokes called cynarin is said to boost liver function. Artichoke may help with irritable bowel syndrome.
